I love a charcuterie board – all those yummy options in one place, plus they can be so cute with extras added in for color and seasonal festivity. Are you hosting a Hanukkah party this year? Here are some fun options for a latke-inspired board.

Potato Latke Recipe Ingredients
2-3 medium Russet or Yukon Gold potatoes, peeled (yields 1 – 1 ½ lbs. of potato)
2 large eggs, beaten
¼ cup matzo meal
½ medium onion
2 teaspoon kosher salt
½ teaspoon freshly ground black pepper
¼ cup vegetable, or canola oil for frying
If you try the air fryer method, you can either lightly coat the raw potato pancakes with cooking spray, or lightly brush them with vegetable or canola oil before frying.
Alternatives: Want to add some extra options? Feel free to make some mixed latkes using shredded Sweet Potatoes and Zucchini with your white potatoes.

Directions – pan frying
Slice peeled potatoes and run through a food processor fitted with the grater attachment. Place shredded potatoes in a cheesecloth and wring, extracting as much moisture as possible. You can also use pre-packaged shredded potatoes as a time saver.
Measure 2 cups shredded, drained potatoes and place into a medium bowl. Add egg, matza meal, onion, salt and pepper, and stir until well combined.
Heat ¼ cup of oil in a large, heavy-bottomed skillet over medium-high heat. Place large spoonful’s of potato mixture into the hot oil, pressing down on them to form 1/4- to 1/2-inch-thick patties. Cook until golden brown, 4 to 5 minutes. Flip and repeat on the other side.
Remove to a paper towel-lined plate to drain while you cook any remaining latkes.
Directions – air frying
As a healthier alternative, you can use an Air Fryer to make your latkes.
Note: This recipe was tested in the Ultrean Air Fryer 4.2 Quart (4L) Electric Hot Air Fryers Oven Oilless Cooker. It will work with any air fryer, but timing may differ slightly.

Preheat your Air Fryer Oven to 375ºF and set to 16 minutes.
Coat the air fryer racks with cooking spray.
Drop the latke mixture in 2-tablespoon dollops into the air fryer, flattening the tops to make a patty.
Spray the tops of the latkes with cooking spray, or lightly brush them with vegetable or canola oil before frying. Air fry, rotating the tray halfway through, for 8 minutes total.
Repeat with the remaining latke mixture.
